Mom Hack - The Sheet Pan Dinner

In terms of motherhood experience, I am an infant. I don't know many things; I don't have many mommy hacks. However! I have figured out two things: 1. Park near a cart return at the grocery store, and 2. Cook sheet pan dinners when your days are full. 

 

In a nutshell, a sheet pan dinner is a meat, starch, and any vegetable that you enjoy cut into bite-sized pieces and roasted in the oven. Seriously, so easy.

 

For tonight's meal, I chose to roast kielbasa, sweet potatoes, radishes, onion, and broccoli. I regularly change up this recipe, but I always include onion because of the delicious flavor it adds to the meal. You can get creative with this! I think I will try corn on the cob, green beans, and a sprinkling of bacon next time.

You can season this meal with literally anything, but I layered on the olive oil and Cavendar's all-purpose seasoning. If you have never tried Cavendar's, you have no idea what you're missing.

I typically prepare this meal during baby boy's nap time by arranging the ingredients on a sheet pan and sticking the whole thing in the fridge until I am ready to roast. About an hour before we wanted to eat dinner, I popped the pan in the oven at 375 degrees fahrenheit for 45 minutes and enjoyed a glass of Cabernet while I waited. 

Oh! Another perk of this meal - the clean up is a breeze. One knife (shout out to Pampered Chef!), a cutting board, and the sheet pan are the only dishes dirtied in the prepping process.

After 45 minutes, we are enjoying this meal together! Give it a try - you won't be disappointed.
