Fun with Local Eggs

Fayetteville, NC and the surrounding areas have a lot to offer. I know that some of you may have fallen out of your chairs with laughter after reading that statement, but it's true! There are plenty of community festivals, events hosted by small business owners, and activities all over the place. The area of Fayetteville also has several thriving local farmers markets where you can buy quality produce. 


I was recently invited to participate in a Whole 30 challenge - while reading about the convictions of Whole 30, I was inspired to step out of my Food Lion comfort zone and find some local sources of quality foods. After all, I am a small business owner who seeks to support small business! After visiting a farmer's stand, I could not miss the chance to purchase some locally grown eggs. In addition to being absolutely delicious, these eggs are beautiful!

This challenge, which encourages it's participants to spend 30 days eating natural, whole foods, has encouraged me to be creative with my cooking. Confession: I am an oatmeal lover. Oats are a no-go for Whole 30, so I looked up a recipe that would satisfy that craving without breaking the rules. I found this recipe which calls for eggs, a banana, and several other delicious ingredients. I had to tweak this to fit within the standards of this challenge, but you better believe that I was THRILLED to have a fun way to cook these beautiful eggs. 

So good. And that plum? Heavenly!
